City and Guilds Level 1 NVQ Certificate in Food Preparation and Cooking - Award, Certificate & Diploma

The Level 1 Catering and Hospitality course is ideal if you have a passion for food and drink. Completing this course is your first step to working in a professional kitchen or restaurant. You will learn all the basic skills to become a chef, from maintaining a safe place of work to preparing and baking food items. You will get real-world experience working and learning in a professional kitchen and contribute towards providing and managing the canteen services.

The Food Preparation and Cooking Certificate NVQ is divided into units which include subject areas such as fish, meat, and vegetables.

Catering Courses

Compulsory units are

  • Maintain a safe hygienic and secure working environment
  • Work effectively as part of the hospitality team
  • Maintain food safety when storing, preparing, and cooking food

Additional courses include

  • Prepare vegetables, cook vegetables

  • Prepare, and cook fish

  • Prepare and cook meat and poultry

  • Prepare and finish simple salad and fruit dishes

  • Prepare and cook pasta & rice

  • Prepare and cook eggs & Pulses

  • Prepare and cook vegetable protein

Hands on 'taught in the’ kitchen

This course is designed for practical people as most of it is taught in the’ kitchen, the bakery will involve you working alongside the lecturers in the production of the days’ menu.

You will be required to take a VRQ in Serving Food and Drink. The purpose of this is to give you a clear perception of how food production is affected by food service and leads to a better understanding of food presentation and customer reaction.  You will also develop your skills by working on the charity speciality events. Both are voluntary, but they will help with your portfolio.
